CHICKEN FETTUCINE ALFREDO 
1/4 c. butter
2 tbsp. olive oil
1 lb. chicken breast, cubed
1/2 c. chopped green onion
2 cloves garlic, minced
1 c. milk
1 pkg. (2 oz.) dry Alfredo sauce mix
1 can (15 oz.) chopped tomatoes, drained
2 tbsp. basil
Salt and pepper to taste
1 lb. fettucine
1/2 c. Parmesan cheese

Heat butter and olive oil. Sauté chicken, onion and garlic. Stir in milk, sauce mix, tomatoes, salt, pepper and basil. Bring to a boil. Simmer 5 minutes until sauce is thickened. Serve with fettucine noodles and Parmesan.

Makes 4 servings.
