FETTUCCINE ALFREDO WITH SOY MILK 
1 tbsp. olive oil
2 tbsp. butter
1 clove garlic
3/4 c. plus 2 tbsp. Vita-Soy milk (can be low-fat, not flavored)
2 tsp. flour
3 tbsp. Parmesan cheese
1 tbsp. pepper or less
1/2 c. chicken broth
green, red and yellow peppers, cut in strips
noodles

Sauté peppers in oil; add garlic when peppers are almost done. Do not burn. Melt butter, medium-low. Add flour to form paste. Add broth and combine thoroughly. Add soy milk, cheese and pepper. Cook until thickened; stir constantly.

Cook pasta noodles. Spoon vegetables over pasta and top with sauce. Can serve with sautéed chicken or beef.
