STANDARD RECIPE FOR FRITTER BATTER | |
1 c. sifted flour 1/2 tsp. salt 1 tsp. baking powder 2 eggs 1/2 c. milk 1 tbsp. melted butter Sift dry ingredients. Add unbeaten eggs, milk and melted butter. Stir well. Drop by teaspoonful into hot fat at 375 degrees. Cook until golden brown. Variations: Apple fritters, corn fritters, banana fritters. Apple Fritters: Add 1/4 cup sugar, 1/2 cup chopped apples, 1/4 teaspoons mace or cinnamon to fritter batter. Serves 4 to 6. Corn Fritters: Add 1 1/2 cups drained whole kernel corn, 1/4 cup milk in place of 1/2 cup to fritter batter. Serves 4 to 6. |
