1/4 c. salza ranchera 2 eggs Oil for frying Warm salza, but do not boil. Add enough oil to cover bottom of iron pan or heavy skillet, heat. Shake a little salt in pan to prevent eggs from sticking. Drop eggs in hot oil. Reduce heat to medium. Fry eggs slowly. Allow egg whites to set. Remove eggs to warm plate. Pour warm salza on eggs, serve with white flour tortillas. NOTE: For basted eggs, drop eggs in hot oil, place lid on pan, reduce heat to medium and fry slowly. Lid takes care of the basting. |
