HUEVOS RANCHEROS 
1 lg. onion, chopped
3 lg. green peppers
3 tbsp. flour
1 can (29 oz.) whole tomatoes
1 tsp. salt
1 tsp. chili powder
Fresh pepper
3 tbsp. oil
9 eggs
Monterey Jack cheese

Cook onion and pepper in oil about 10 minutes (until transparent). Add flour, tomatoes, salt and chili powder and a little pepper. Simmer for 10 minutes. Pour into baking dish (9 inch or so).

Break 9 whole eggs and place them symmetrically on top of sauce without breaking yolks. Add 1 cup of diced Jack cheese, placing cubes between eggs. Bake at 350 degrees until eggs are cooked (about 25-30 minutes).
