HUEVOS RANCHEROS 
3 tbsp. oil
1 green pepper, sliced
1 lg. onion, chopped
2 cloves garlic, crushed
2 tomatoes, chopped or 2 c. stewed
1/2 c. tomato sauce
1 1/2 tsp. salt
1-2 tbsp. chili powder
1/2 tsp. cumin
1/2 tsp. oregano
6 eggs
6 slices mozzarella or Jack or Cheddar cheese

Saute in large skillet oil, green pepper, onion and garlic. Add tomatoes, tomato sauce, salt, chili powder, cumin and oregano. Cook over medium heat 20 minutes (10-15 minutes if you're in a hurry) occasionally mashing tomatoes.

Break into sauce 6 eggs. Cover eggs with cheese. Cover skillet and poach eggs over low heat 5-7 minutes (as desired). Serve with warmed corn tortillas on the side or under eggs and sauce. Serves 3-6.
