MACKEREL IN TOMATO SAUCE 
2 tbsp. olive oil
1 sm. onion, sliced and cut into 4 pieces
1/2 clove garlic, chopped
1 tbsp. chopped parsley
1 sm. can tomatoes
2 tsp. water
1/2 tsp. salt
1/2 tsp. pepper
3 lb. mackerel

Place olive oil, garlic, and parsley in skillet and brown. Add tomatoes, water, salt, and pepper. Cook 5 minutes. Add fish, cover skillet and cook 5 minutes. Turn fish over and cook 10 minutes longer. Serves 4.
