PASTA WITH FRESH TOMATO SAUCE 
4 tbsp. olive oil
2 tbsp. minced garlic
3 lbs. tomatoes, chopped
1 lb. linguini
3 tbsp. red wine vinegar
Salt & pepper to taste
1 tbsp. extra virgin olive oil
Grated Parmesan cheese

Mix 4 tablespoons oil, garlic, tomatoes, vinegar and salt and pepper. Let stand at room temperature about 6 hours.

At serving time, cook linguini as directed. Drain. Mix with fresh tomato mixture. Add 1 tablespoon olive oil. Sprinkle with Parmesan cheese. Serves 4.
