SPAGHETTI WITH FRESH TOMATO
SAUCE
 
Olive oil
1 1/2 lb. tomatoes, peeled and sliced
1/2 c chopped onion
1/3 c chicken broth
1/2 tsp dried basil leaves
1/2 tsp salt
1/4 tsp black pepper
12 oz thin spaghetti (uncooked)
Grated Parmesan cheese

In a large skillet, cook onions in olive oil until onions are lightly browned. Stir in tomatoes, broth and seasonings. Cover. Simmer 20 minutes, stirring occasionally. Cook spaghetti according to package directions. Drain. Serve with tomato sauce and cheese.

Serves 6.
