FRESH TOMATO - BASIL SAUCE WITH ROTELLI | |
5 lg. ripe tomatoes 1 c. fresh chopped basil leaves 1/2 c. olive oil 2 cloves crushed garlic Salt & pepper to taste 1 lb. box tri-color rotelli Dice tomatoes, reserving juice. Chop basil leaves finely. Combine tomatoes, basil, olive oil, garlic, salt and pepper in a glass or ceramic bowl. Cover and let stand for 1 hour at room temperature. Cook pasta (rotelli) according to directions. Serve fresh sauce over hot rotelli. Serves 6. |
