FRESH TOMATO SAUCE 
12 lbs. tomatoes, peeled and diced
1/4 c. oil
3 med. onions, sliced
2 med. green peppers, diced
3 lg. carrots, sliced or shredded
3 med. cloves garlic, minced
1/8 c. brown sugar
1 (12 oz.) tomato paste
2 tbsp. salt
1/2 tsp. pepper
1 1/2 tsp. basil
2 tsp. oregano
2 or 3 drops of hot pepper sauce (optional)

(Or chopped hot peppers to taste).

Heat oil on medium. Add oil, onion, garlic and green peppers until tender. Add tomatoes and other ingredients. Bring to a boil over high heat. Partially cover. Reduce heat and simmer 2 hours, stirring occasionally.

Put in freezer containers for up to one year. When thawed for spaghetti sauce, add another can of tomato paste. Good use as is for soups or stews. Great sauce for hot sausage.
