MEXICAN TACO BAKE 
1 lb. ground beef
8 tortillas
1 onion, chopped
1 (4 oz.) can diced green chilies (Ortega)
1 (15 oz.) can enchilada sauce (your favorite)
2 tbsp. olive oil
2 cups shredded cheddar cheese
1 cup Mexican "fiesta" blend cheese

SUGGESTED SEASONINGS:

taco seasoning
salt and pepper
curry powder
cayenne pepper

Preheat oven to 375°F. Heat a saucepan and sauté chopped onions, then add meat. Season to taste and cook to well done. Remove from pan to a bowl.

Next open chilies and enchilada sauce and mix well.

In a large baking pan layer tortillas side by side. Then add cheese, then sauce and meat. Layer like this until you have used all 8 tortillas.

Bake at 375°F until cheese melts.
