FRESH TOMATO SAUCE FOR PASTA 
3 tbsp. olive oil
1 sm. onion, minced
2 lg. cloves garlic, pressed
6 c. tomatoes, peeled, cored & chopped
1/2 tsp. each leaf oregano, basil
1 tsp. tarragon
Salt & pepper
Cooked fettuccine or linguine
Parmesan cheese

Heat oil in a frying pan and saute onion with garlic until softened, then add tomatoes, oregano, basil and tarragon. Cover and cook over low heat for 20 to 25 minutes, or until reasonably smooth. Salt and pepper to taste and toss with hot pasta. Serve with Parmesan cheese. Serves 6.
