INDIVIDUAL COFFEE CAKES 
1/2 c. butter plus 1 heaping tbsp. shortening
1 egg
3 c. flour
4 tsp. baking powder
1/2 c. sugar
3/4 c. milk
1 tsp. vanilla
1 tsp. salt

Cream butter, shortening and sugar. Add the egg and then add the rest of the ingredients mixing like baking powder biscuits. This is a stiff drop batter.

Drop by tablespoons on greased cookie sheet. Make a dent in each biscuits and fill with jam. Raspberry jam or orange marmalade are preferred. Bake in 375 degree oven until done for 10-15 minutes. Frost with a thin powdered sugar frosting while still warm.
