INDIVIDUAL CHEESE CAKES 
16 oz. cream cheese, soft
1/2 c. sugar
1 egg
1 tsp. vanilla
1/2 tsp. lemon juice
18 vanilla wafers
Pie filling (cherry or blueberry are good)

Mix first 5 ingredients together until well blended. Line muffin tin with cupcake liners. Put 1 vanilla wafer in the bottom of each muffin cup. Fill half way with cream cheese mixture and bake at 350 degrees for 12 to 15 minutes or until light brown on top. Cool thoroughly, top with pie filling if desired. If not serving immediately, keep in refrigerator. Serves 18.
