POTATOES FLORENTINE 
2 med. potatoes, pared and thinly sliced
1 med. onion, sliced
1 pkg. (10 oz.) frozen chopped spinach, thawed and drained
3/4 c. Bisquick baking mix
1 3/4 c. milk
1/2 c. shredded Cheddar cheese
2 eggs
3/4 tsp. salt
1/2 tsp. Italian seasoning
1/8 tsp. pepper

Heat oven to 350 degrees. Grease rectangular baking dish, 12 x 7 1/2 x 2 inches. Layer potatoes in dish; top with onion. Combine remaining ingredients; pour over top. Bake until potatoes are tender, about 35 minutes.

Makes 4 to 6 servings.
