POTATO MEATLOAF 
1 lb. ground beef
1 med. onion, minced
1 c. fine soft bread crumbs
1/4 c. oats or wheat germ
1/2 c. water or broth
1 1/4 tsp. salt
1/4 tsp. seasoned pepper
2 eggs

FILLING:

1 lb. grated potatoes
1 (10 oz.) pkg. frozen chopped spinach, thawed and squeezed out
1 tsp. salt
2 eggs, lightly beaten

Combine meatloaf ingredients in a bowl, mixing lightly. Pat half the mixture into greased 9x5 inch loaf pan. Mix potatoes, spinach and salt and cover the meat with this mixture. Pour eggs over potato layer. Top with remaining meat mixture. Bake at 350 degrees for 1 hour. Serves 6.

This spinach potato meatloaf was the most amazing meatloaf in my life. The flavor was mouthwatering and the presentation of the meatloaf was amazing on the plate.

I substituted fresh chopped spinach instead of frozen.And I imagine that I could place in garlic cloves and garlic salt instead of regular salt next time to make a Spinach and Potato. Garlic Meatloaf.
