POTATO MEATLOAF 
1 lb. ground beef
1 med. onion, minced
1 c. fine soft bread crumbs
1/4 c. oats or wheat germ
1/2 c. water or beef broth
1 1/4 tsp. salt
1/4 tsp. seasoned salt

FILLING:

1 (10 oz.) pkg. frozen spinach, thawed and drained
2 c. frozen hash brown potatoes, thawed or 1 lb. fresh potatoes, grated
1 tsp. salt
2 eggs, lightly beaten

Combine meat loaf ingredients, mixing lightly. Pat half the meat into greased 9 x 5-inch loaf pan. Cover with mixture of potatoes and spinach and add salt. Pour eggs over potato layer. Top with remaining meat mixture.

Bake at 350 degrees for 1 hour. Drain excess fat and serve on platter. Even through this recipe calls for a loaf pan, I prefer a glass 8 x 8 x 2 inch pan or my old standby - the 9 x 13 Pyrex.
