SUMMER SKILLET MEAL 
1/2 stick butter
1 sm. yellow summer squash, sliced
2 potatoes, peeled, sliced
1 med. onion, sliced
1 green pepper, cut in strips
1 fresh tomato, sliced
Salt and pepper

Melt half the butter in skillet. Add a layer of squash, potatoes, onions, green pepper, tomatoes, salt and pepper. Repeat layers. Put remaining butter on top. Cover and simmer until vegetables are tender.
