CHICKEN GUMBO 
2 c. boned chicken
2 c. corn, fresh or canned
4 c. chicken broth
1 med. onion, chopped
3 tbsp. unsaturated oil
1 green pepper, chopped
2 c. sliced okra
1 (8 oz.) can tomatoes
1 clove garlic, minced

Simmer 1 chicken in 1 1/2 quart of water until tender. Refrigerate. When cool, remove the meat from bones and skim fat from broth.

In a large pot, saute the onions, garlic and green pepper in oil until tender. Add broth, tomatoes, okra and corn and simmer for 30 minutes. Add chicken at the last minute. 8 servings. 180 calories per serving.
