POPPY SEED DRESSING AND SPINACH
SALAD
 
1 c. sugar
1 tbsp. dry mustard
1 tsp. salt
1/3 c. red wine vinegar
1/2 med. sweet red onion, sliced and separated into rings
1 c. salad oil
1 1/2 tbsp. poppy seeds

In a blender, mix sugar, mustard, salt and vinegar. Gradually add oil until mixture thickens and becomes smooth. Fold in poppy seeds and add red onion rings. Place in a covered container and refrigerate at least 2 hours to blend flavors. Stir occasionally.

SALAD:

Fresh spinach leaves
Grated Swiss cheese
Sliced mushrooms
Cooked, crumbled bacon
Mandarin oranges
Sesame seeds and-or sunflower seeds

Combine above salad ingredients and toss with Poppy Seed dressing prior to serving.
