TOSSED SALAD WITH STRAWBERRIES AND POPPY SEED DRESSING | |
1 head Romaine lettuce 1 pt. fresh strawberries 1 sm. Bermuda onion in rings Wash lettuce. Pat dry. Refrigerate until serving time. Place greens on individual salad plates or a large salad bowl. Slice strawberries and onions and place on top of greens. Drizzle poppy seed dressing over salad. Toss if using large salad bowl. May use mandarin oranges instead of berries. POPPY SEED DRESSING: 1/2 c. mayonnaise 2 tbsp. vinegar 1/3 c. sugar 1/4 c. whole milk 2 tbsp. poppy seeds Place all ingredients in a jar; cover and shake until blended. Keeps several days in refrigerator. |

I made this for my boyfriend as part of our anniversary meal. :) Instead of the mayonnaise, I used a 5.8 oz container of Greek Yogurt 'Honey' and added blueberries to the [recycled hidden valley] container instead of the salad itself. I find small things in salads annoying to try to stab, like blueberries. So after I shook the dressing vigorously for awhile, it gave it a nice blue color, rather than the unromantic white goo. And the the container was perfect for straining out the blueberry skins!
