CHEESY TATER TOPPER | |
1 c. skim milk 1 tbsp. cornstarch 1/2 tsp. dry mustard 1/8 tsp. pepper 3/4 c. American cheese, shredded 1 (10 oz.) pkg. frozen mixed vegetables, cooked & drained 4 med. baking potatoes, baked Stir together milk, cornstarch, mustard and pepper; cook until thickened and bubbly, stirring often. Add cheese, stirring until melted. Stir in mixed vegetables and heat through. Serve warm over baked potatoes, cut lengthwise into quarters. Potatoes may be baked in microwave oven (14 to 17 minutes, let stand 5 minutes to finish baking). This is an attractive dish and a good accompaniment to a meat entree. It eliminates the desire for sour cream or butter on the baked potato. 255 calories per serving. Preparation Time: 14 minutes. Low fat and low cholesterol. |
