CHILLY DAY CHILI 
2 lbs. ground beef chuck
1 tbsp. oil
2 med. onions, chopped
1 green pepper, diced
1 lb. can tomatoes
1 (15 oz.) can tomato sauce
1/2 c. ketchup
1 tbsp. chili powder
2 tsp. salt
1/4 tsp. pepper
2 (1 lb.) cans red kidney beans, partially drained

Brown ground beef in oil. Add onions and green pepper and brown lightly. Add tomatoes, tomato sauce, ketchup, chili powder, salt and pepper. Simmer, uncovered, about 30 minutes, stirring occasionally. Add kidney beans and simmer an additional 15 minutes. Serves 10 to 12.

This was so simple, I used pinto beans instead of kidney beans. I also added a spoonfull of sour cream and chopped green onions on to my serving for extra flavor.

I have made this chili over an open fire every year on a camping trip for 10 years! I've tweaked it just a little by adding a little sugar, Tabasco, and garlic. I've also substituted black beans for the kidney beans. The flavor is terrific, and everyone loves it!
