JO-ANNE'S HAWAIIAN CARROT CAKE 
2 cups all-purpose flour
2 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. salt
1/2 tsp. nutmeg
1 1/2 cups sugar
2 1/2 cups shredded carrots
3 eggs
3/4 cup mayonnaise
1 can crushed pineapple

Mix all dry ingredients, then liquid ingredients, add into the dry ingredients. Bake at 350°F for 45 to 60 minutes.

Cream Cheese Frosting:

1/2 cup (1 stick) butter, softened
1 (8 oz.) cream cheese
1 tsp. vanilla
1 (1 lb.) box confectioners' sugar

Mix together well then spread on cooled cake. Enjoy!
