LO CAL STROGANOFF 
2 1/2 lb. stroganoff meat
1/2 tbsp. black pepper
1 lb. onions, chopped
1 lb. mushrooms, sliced
1/4 c. oil
1/2 c. flour
1 qt. beef broth
1/2 c. tomato paste
1/4 c. sherry
1/2 tbsp. dry mustard
1 tsp. garlic salt
1/2 tsp. oregano
1/2 tsp. dill weed
3/4 c. plain yogurt

Sprinkle meat with pepper. Let stand 15 minutes. Saute onions and mushrooms in small amount of oil. Remove. Brown meat quickly on both sides. Set aside.

Blend oil and flour. Gradually add broth until smooth and thick. To broth add tomato paste, sherry and seasonings. Combine with meat, onions and mushrooms. Simmer for 20 minutes. Temper yogurt by adding small amounts of sauce to yogurt. Remove stroganoff from heat, quickly blend yogurt into sauce. Serve over rice or noodles. Makes 10 servings. 300 calories per serving.
