AUNT EVELYN'S CANDIED YAMS 
2 (1 lb.) can yams
1 1/4 c. brown sugar, packed
1 1/2 tbsp. cornstarch
1/4 tsp. salt
1/8 tsp. cinnamon
1 tbsp. shredded orange peel
1 lb. apricot halves
2 tbsp. butter
1/4 c. pecans, chopped

Pour drained yams into greased 10 x 6 casserole. In saucepan, combine sugar, cornstarch, salt, cinnamon, and orange peel. Drain apricots and reserve syrup (use water to make 1 cup). Pour syrup into cornstarch mix, stir over medium heat until boiling, add butter, apricots, and pecans. Pour over yams and bake uncovered 25-30 minutes at 375 degrees.
