OREGON COAST CRAB MOLD 
On the day before the party, assemble:

1 lb. cleaned, picked, fresh Oregon crab, cooked
1 can cream of mushroom soup, undiluted
8 oz. cream cheese
1 c. plus 3 tbsp. mayonnaise
1 c. finely chopped celery
3 green onions with tops, thinly sliced
1 env. unflavored gelatin
4 tbsp. water

Dissolve gelatin in 4 tablespoons cold water. Cream cheese and mayonnaise together. Over very low heat, stirring, bring soup barely to boil; take off heat. Add gelatin and stir well. Add cheese mixture, crab, celery and onions. Blend well. Turn into a non-stick sprayed mold or small deep bowl. Chill overnight.

Just before guests arrive, unmold onto a pretty plate and surround with assorted crackers. Provide a butter knife for spreading.

NOTE: May also use lobster or imitation crab.
