FRUIT COCKTAIL CAKE 
1 can fruit cocktail
2 c. sugar
2 c. flour
2 eggs
1 tsp. vanilla
1 tsp. cinnamon
2 tsp. baking soda
1/2 tsp. salt

Preheat oven to 350 degrees. Mix all ingredients with mixer for 3 minutes. Bake in greased and floured, 9 x 13-inch pan at 350 degrees for 40 minutes.

ICING:

3/4 c. cream
1 stick butter
3/4 c. sugar

Boil 5 minutes. Add 1 package coconut (optional) and pour over cake.
