SHRIMP NEWBURG 
1 1/2 lb. raw shrimp, peeled and cleaned
1 sm. onion, finely chopped
1/4 c. butter
1 c. fresh mushrooms, chopped
1 1/2 tbsp. flour
1/4 tsp. salt
Dash of cayenne pepper
1 c. sour cream
1 1/2 c. cooked rice
3 oz. white wine (Chablis)
3 1/2 to 4 oz. grated American cheese
3 1/2 oz. milk

Heat milk at low temperature. Add cheese, stirring constantly until cheese liquefies. Let simmer. Saute shrimp and onion in butter 6 minutes, or until shrimp are pink. Add mushrooms. Cook for 5 minutes more. Sprinkle in flour, salt and pepper. Stir in sour cream. Cook gently 3 minutes. Add melted cheese sauce and wine. Cook 7 minutes. Serve over rice. Serves 4.
