RHUBARB MUFFINS 
1 1/2 c. brown sugar
1 egg
1 c. milk
2 tsp. vanilla
1 1/2 c. rhubarb
2 1/2 c. flour
1/2 tsp. salt
1/2 c. oil
1 tsp. baking powder
1 tsp. baking soda

CRUMBS TOPPING:

1 tsp. butter
1/2 c. sugar
1 tsp. cinnamon

Combine sugar, egg, milk, oil, and vanilla. Add rhubarb (cut in small pieces). Add dry ingredients. Stir until combined. Pour into greased cup cake pans. Top with crumbs before baking. Bake at 350 degrees 15 to 20 minutes. Can be baked as a coffee cake.
