RHUBARB MUFFINS 
1 1/4 c. brown sugar
1/2 c. cooking oil
1 egg
2 tsp. vanilla
1 c. buttermilk

Mix first 5 ingredients well.

Add: 1 tsp. baking soda 1 tsp. baking powder 1/2 tsp. salt 1 1/2 c. finely cut up rhubarb 1/2 c. nutmeats

TOPPING:

1/3 c. sugar
1 tsp. cinnamon

Mix and sprinkle on muffins before baking. 400 degree oven for 10 minutes then 350 degree oven. Bake 20 to 25 minutes. About 20 muffins.
