RHUBARB MUFFINS 
1 1/4 c. brown sugar
1/2 c. oil
1 egg
2 tsp. vanilla
1/2 c. sour milk
2 1/2 c. sifted flour
1 tsp. baking soda
1 tsp. salt
1 1/2 c. rhubarb, cut fine
1/2 c. nuts
1 tbsp. each sugar and cinnamon, combined (more if needed)

Cream sugar, oil, egg and vanilla. Combine flour, soda and salt. Add flour mixture to creamed ingredients alternately with sour milk. Stir in rhubarb and nuts. Yields 20 muffins. Sprinkle cinnamon and sugar on tops before baking at 400 degrees for 20-25 minutes.
