JAMBALAYA 
2 c. onions
2 cloves garlic
1 bell pepper
1 whole chicken
1 lb. sausage
Salt to taste
Pepper to taste
1/4 c. flour
6 c. water
3 c. rice
1/4 oil

Take your chicken and cut up. Boil in a pot with water. Let cook about 20 to 25 minutes, then set aside. In an iron pot, fry smoke sausage. Take out and put aside. In the same iron pot, saute onions, garlic, and bell pepper until transparent. Take chicken off the bone and save the water it was cooked in. Make a roux with the flour and oil. Add chicken, sausage, and water. Salt and pepper to taste. Bring to boil; add rice. Turn on low heat and cook about 20 minutes or until rice is tender.
