JAMBALAYA 
2 lbs. total, any combination of hot (Jimmy Dean) breakfast sausage, diced ham & med. deveined, shelled raw shrimp
2 cloves garlic, minced
1/2 c. chopped onion
1/2 c. chopped green onion
3/4 c. chopped celery
3/4 c. chopped green pepper
1/2 c. chopped fresh parsley
1 (16 oz.) can tomatoes, chopped
1/2 tsp. cayenne pepper
1 bay leaf
1 c. uncooked rice
1 1/2 c. water

Brown the cubed sausage, add ham, garlic, onions, celery and pepper. Cook until tender. Add parsley, tomatoes, spices, rice and water. Bring to a boil. Cover, cooking without stirring over low heat for 20 minutes. Add shrimp and cook 10 minutes more. Serves 4.
