CUBED STEAK PARMIGIANA 
6 beef cubed steaks
3 tbsp. flour
1/2 tsp. salt
1/8 tsp. pepper
1 egg
2 tbsp. water
1/3 c. fine, dry bread crumbs
1/3 c. grated Parmesan cheese
1 (15 oz.) can tomato sauce
1/2 tsp. basil leaves
1 tbsp. sugar
Garlic
1/2 tsp. leaf oregano
1/4 c. grated Parmesan
6 slices Mozzarella cheese

Dredge steaks in a mixture of flour, salt and pepper. Dip steaks in a mixture of egg and water, beaten together. Dredge steaks again in a mixture of bread crumbs, 1/3 cup Parmesan cheese and basil, coating evenly.

Measure 1 tablespoon cooking oil into a 13x9x2 inch roasting pan. Place in oven and preheat to 375 degrees. Place steaks in pan and bake for 25 to 30 minutes. Pour off drippings.

Combine tomato sauce, sugar, garlic and oregano and pour over meat. Sprinkle with 1/4 cup Parmesan cheese. Bake 20 minutes. Place slice of Mozzarella on each steak. Bake 3 to 5 minutes to melt cheese.
