LASAGNA 
Lasagna noodles, about 1/2 lg. pkg.
1 lb. ground beef
2 cloves crushed garlic
1/4 c. minced onion
1 can tomato sauce (1 c. plus 8 oz.)
1 (#2) can tomatoes (2 1/2 c.)
1 1/2 tsp. salt
1/4 tsp. pepper
1 1/2 tsp. oregano (or basil or a little of each)
1/2 lb. Mozzarella cheese, sliced or grated
1/2 c. Parmesan cheese

Cook noodles for 20 minutes and drain. Brown meat, add garlic and onion. Stir in tomatoes and sauce, salt, pepper oregano, cover and simmer 20 minutes. Fill 3 quart casserole. Alternate layers of noodles, meat mix and cheese. Bake at 350 degrees for 40-45 minutes. Serves 6 well. You can make this a day ahead. Remove from refrigerator an hour before cooking.

Add this layer to the middle of above recipe for special company use at least a 3 inch high pan.

RICOTTA CHEESE LAYER:

3 eggs
1 lb. Ricotta cheese
1/4 c. milk
1/4 tsp. Parmesan cheese
1 c. Mozzarella cheese
Salt and pepper

Stir together and place in middle of lasagna recipe above. Bake at 350 degrees for 440 degrees for 50 minutes.
