ZUCCHINI MUFFINS 
1/2 c. whole wheat flour
1/2 c. all-purpose flour
2 tsp. baking powder
1 tbsp. butter
1/2 c. skim milk
1/2 tsp. salt
1/2 c. sugar
1 egg white
1/2 c. grated unpeeled, zucchini

Stir dry ingredients together. Beat egg white until foamy. Add to milk along with melted butter. Add liquid ingredients to the flour mixture with the zucchini, stirring just enough to moisten. Fill baking cups 2/3 full. Bake at 375 degrees for 15 to 20 minutes. These are low in cholesterol and calories.
