ERIN'S HAMBURGER PIE | |
MEAT PIE: 1 1/2 lb. ground beef 1 egg 1 c. bread crumbs 1 tsp. salt 1/8 tsp. pepper 1/4 c. catsup 1/2 c. milk TOPPING: Mashed potatoes (great use for leftovers) 1/2 c. shredded cheese Heat oven to 350 degrees. Mix beef, bread crumbs, egg, salt, pepper, catsup and milk. Spread in ungreased pie pan (9 x 1 1/2 inches). Bake, uncovered, for 35 to 40 minutes. Spread mashed potatoes (your favorite recipe) over baked meat pie. Sprinkle with cheese. Bake 3 to 4 minutes longer or until cheese melts. If using leftover mashed potatoes that are cold, decrease cooking time of meat pie slightly. Spread mashed potatoes and bake until heated. Then sprinkle in cheese and put in oven to melt. Makes 4 to 5 servings. |
