SOPAIPILLAS 
2 c. flour
1 tsp. baking powder
1/2 tsp. salt
1 tbsp. shortening
1/2 to 3/4 c. water
Equal amts. granulated sugar & cinnamon to sprinkle with about 2 tsp. each

Cut shortening in flour, salt and baking powder. Gradually add water just to hold together. Put on lightly floured board and roll out with rolling pin until moderately thin. Cut into squares. Drop a few squares (3 to 4) at a time into deep hot oil. Turn with fork 2 or 3 times to make them puff evenly.

Squares should be light brown. Sprinkle with desired amounts of sugar mixture. You can put powdered sugar or honey on them. "We made these in Home Ec. this morning"
