COTTAGE CHEESE PIE 
Cream together 1 cup of sugar and 3/4 cup butter. Add one at a time, 3 well beaten eggs and incorporated each with the mixture before adding the next. Add 2 cups cottage cheese, 1 tablespoon cornstarch and grated rind of 1 lemon. Beat all thoroughly and bake in a large pie plate lined with pastry. Oven 375 degrees, time of baking 30-45 minutes.
