COTTAGE CHEESE PIE | |
3 eggs 1/2 c. sugar 1/2 c. Half and Half 2 tbsp. all-purpose flour 2 tsp. lemon juice 1/8 tsp. salt 2 c. sm.-curd cottage cheese Unbaked 8-inch pastry shell 1 tbsp. sugar 1/2 tsp. cinnamon Combine sugar and eggs in blender. Process for 15 or 20 seconds until well blended. Add Half and Half, flour, lemon juice and salt. Process 15 to 20 seconds longer, or until mixture is smooth. Add cottage cheese and process at medium speed until smooth. Pour into pastry shell and bake at 350 degrees for 40 to 45 minutes or until filling is set. Combine 1 tablespoon sugar and 1/2 teaspoon cinnamon and sprinkle over while pie is still warm. |
