RAINY DAY POTATO SOUP 
5 slices bacon, chopped
2 c. water
4 c. milk (or part cream)
Fresh chopped parsley
1 onion, chopped
2 c. diced potatoes
Salt and pepper

Fry bacon in large heavy Dutch oven, slowly. Add onion and cook until soft. Add water and potatoes and cook until potatoes are soft. Add milk (or part cream) and simmer until hot. Season to taste with salt and pepper. Sprinkle with parsley before serving.
