WINTRY DAY BEAN SOUP 
2 c. mixed dried beans
2 tbsp. salt
2 qt. water
1 bay leaf
2 c. diced ham or sliced smoked sausage
1 lg. onion, chopped
1 clove garlic, minced
1 tsp. chili powder
1 qt. tomatoes, chopped
2 tbsp. lemon juice

Use several varieties of beans (pinto, lima, kidney, red beans, garbanzo, Northern beans, etc.) Rinse beans, place in large kettle. Cover with water, add salt and soak overnight. Drain, add 2 quarts water, bay leaf and meat. Simmer 1 hour or longer. Add garlic, onion, chili powder, tomatoes with juice and lemon juice. Simmer 45 minutes. Add salt and pepper to taste.
