NEW ENGLAND CLAM CHOWDER | |
2-3 pieces of salt pork, diced sm., if not available you may use 2-3 oz. diced bacon 2 oz. real butter 1 good sized onion, chopped 3 cans chopped clams, including juice 1 bottle clam juice, found near the tuna & canned clams in your supermarket 3-5 c. cubed potatoes 16 oz. med. cream or half & half Saute salt pork over medium heat 4 to 5 minutes. Remove salt pork but leave fat. Add butter and heat to simmer but do not brown. Add onion and cook about 4 minutes. Add potatoes, bottled clam juice and all the juice from the canned clams. If you need to, add enough water to cover. Bring to a boil, then simmer for about 8 minutes. Check potatoes for about 8 minutes. Check potatoes for doneness. Add clams and simmer 3minutes more. Scald cream in separate pan and add. Serve with oyster crackers and freshly grated pepper. |
