CHICKEN RICE CASSEROLE DELUXE 
This is a flavorful update.

1 can cream of chicken soup
1 can cream of mushroom soup
1 can cream of celery soup
3 tbsp. chicken stock
3 medium mushrooms, chopped
1-2 ribs celery, finely chopped
1/4 cup yellow onion, minced
1/8 tsp. ground coriander
1/8 tsp. ground cardamom
1/8 tsp. ground cumin
1/8 tsp. ground mustard seed
1/8 tsp. ground cayenne pepper
3 cups instant rice
2 lb. (about) chicken pieces, skin and fat removed (boned thighs are ideal)
I Can't Believe It's Not Butter Spray

Mix soups, vegetables and spices in a large bowl. Add instant rice.

Arrange chicken pieces in 13x9-inch Pyrex baking dish and cover with mixture.

Cover with foil and bake at 400°F for 50 minutes on middle rack. Remove from oven. Remove foil. Set oven to broil. Spray liberally with I Can't Believe It's Not Butter. Raise rack one notch and broil about 10 minutes until the the top is golden brown and crispy.
