TWICE BAKED POTATOES | |
baking potatoes (1 per person served) 2 tbsp. butter salt and pepper to taste 1 pkg. baked potato seasonings shredded Cheddar cheese milk (enough to mash potatoes) 1 small container sour cream (optional) Bake potatoes at 425°F until cooked through. While the potatoes are still hot, slice the top of each cooked potato and scoop out inside of potato (leaving the empty potato shell) and place in a mixing bowl. Add butter, milk, sour cream, salt and pepper and beat with electric mixer as if you were making mashed potatoes. When potatoes are creamy and free of lumps, pour in packet of baked potato seasonings and mix well with a spoon. Spoon mashed potato mixture back into the empty potato shells until full. Top with Cheddar cheese and return to the oven to bake until cheese is melted and potatoes are hot. |
