NUTELLA PEANUT BUTTER COOKIES
1 1/2 cups all-purpose flour
1/2 tsp. baking soda
1/2 tsp. salt
1 cup sugar, divided
3/4 cup Nutella (hazelnut spread)
1/4 cup peanut butter (creamy or crunchy)
1/2 cup (1 stick) butter, melted
1 egg
1/2 tsp. vanilla extract

Preheat oven to 350°F. Line a cookie sheet with parchment paper and set aside.

Whisk flour, baking soda and salt in a medium bowl until combined.

Beat 1/2 cup sugar, Nutella, peanut butter and melted butter in a large bowl at medium speed, about 2 minutes or until creamy. Beat in egg and vanilla for 30 seconds or until combined. At low speed beat in flour mixture for 30 seconds or until blended.

Place remaining sugar in a small bowl. Roll 1 tablespoon dough per cookie into ball; roll in sugar and place on prepared cookie sheet, slightly flatten (I use a flat bottomed cup or glass).

Bake cookies at 350°F for 8 to 10 minutes. Allow to cool on pan for 2 minutes. Place cookies on wire rack and let cool completely.

Makes 3 1/2 dozen cookies.
