ITALIAN DAUBE AND GRAVY 
3 to 3 1/2 lb. piece of lean beef, chuck or shoulder
1/2 to 1 lb. piece pork
1 (6 oz.) can tomato paste
1 (#2) can tomatoes
1 lg. onion, chopped fine
3 cloves garlic to stuff into meat
6 cloves garlic for gravy, put through garlic press
1/2 c. celery, chopped fine
1 tsp. oregano
1 tsp. rosemary
1 tbsp. olive oil
2 bay leaves
1/2 tsp. sugar
Salt and pepper

Use heavy pot with tight cover. Put 1 tablespoon olive oil in pot. Stuff garlic into meat, salt and pepper. Put meat in hot oil, brown on all sides. Take meat out of pot. Put chopped onions into pot and brown. Add more olive oil, if needed. Add tomato paste.

Cook until orange colored. Add meat, tomatoes, celery, 6 cloves garlic, oregano, rosemary, sugar, 2 bay leaves. Turn fire on low. Cook until meat is tender.
