ITALIAN GIRLS RED GRAVY | |
2 (12 oz.) Contadina tomato paste 2 c. chopped onions 1 to 1/2 c. Crisco oil or olive oil 28 oz. Progresso tomato puree 12 fresh sweet basil leaves or 1 tsp. dry basil 3 tsp. ground cloves Salt and pepper to taste 1/2 to 3/4 c. sugar (and that's not too sweet) 1/2 c. chopped parsley 5 c. water Put oil in 10 or 12 inch fry pan. Heat oil, put onions in heated oil and fry until wilted. Add tomato paste, garlic, sugar, salt, pepper and cloves. Fry for 5 minutes. Add tomato puree, mix well. Take from fry pan and put in 8 or 12 quart pot. Add water, parsley, basil leaves. If too thick, add more water but don't make it too thin or it won't be Adele Kennedy's Red Gravy. Put any meat you wish, bring to a boil and cook on low heat about 2 hours. Stir every few minutes so it will not burn. Good luck. |
